What are sharpening Stone grits?

A sharpening stone usually has a coarse side and a finer side that is going to reshape your edge to get it back thin in order to make it sharpen. The metal is peeled off to get a sharp fine edge to get things cut easily and neatly.

What are the Basic Types?

  • Oil stones
    These usually require the use of oils and hence leave oil residues on the instruments hence these are a bit messy. Also, they have a slower sharpening rate. The best part about these is that they give you a nice polish in the end.
  • Water stones
    These are to be made wet before use. If compared to oil stones, these are faster at sharpening edges and aren’t difficult to work with. Usually do not create much mess. The only drawback of water stones is that it is not that long-lasting. The stone might tear down early because of the use of water.
  • Ceramic stones
    Ceramic stones don’t really make a different class or anything but they certainly are the best option for local or low-grade use (By low grade I refer to non-industrial use that is by chefs and cooks to sharpen their knives and other cutlery items.) They neither require oil nor water for use. They give a very sharp blade are very useful for cutting purposes especially knives.
  • Diamond stones
    Diamond Stones are excellent in terms of almost everything. They give a very nice fine and sharp edge. These stones can be used as it is. You may or may not use water or oil to work with. They are mostly for industrial use. These are the most long-lasting ones and so are high end sharpening stone grits.

How to Use?

Start at the heel and time it so that it goes all the way across. You go from one side to the other. Make sure that your stone alternate from side to side to keep your bevel centered. Do three times on one side and then three times on the other. Once you get that V established, you can go from the coarser side to the finer side. Alternate from one side to the other until it smooths out.

How do I know what angle to use?

A smaller angle gives more sharpness while a greater angle gives durability to the knife. You just need to know what you require. the preferred angle for sharper knives is between 20 to 25 degrees.

How to choose?

First, know your budget and what you expect the results to be.

If you want it to be professionally used and expect the finest edges, invest in a good one that probably would be diamond grit for me. it’s long-lasting and would definitely cover your expense over it with time.

Water Stones are a good option if you wanna be just in the middle somewhere. These are less messy and won’t leave oil residues and so are easier to clean giving you a faster cut and finer finish.

If you don’t want to invest that much and just want the job to be done, I’d suggest you to go for ceramic stones.
